  • 4 chicken breasts, sliced into cutlets
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sundried tomatoes, chopped
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • Fresh basil leaves, for garnish
  • 8 oz fettuccine pasta, cooked al dente


  1. Season chicken cutlets with salt and pepper, then dredge in flour, shaking off excess.
  2. In a large skillet, heat olive oil and butter over medium heat. Add chicken and cook until golden brown on both sides. Remove and set aside.
  3. In the same skillet, add garlic and sauté until fragrant. Pour in chicken stock to deglaze the pan, scraping up any browned bits.
  4. Stir in heavy cream, Parmesan, sundried tomatoes, chili flakes, and oregano. Bring to a simmer.
